Paleo Protein Banana Muffins

Ingredients

3 ripe mashed bananas

1TBSP pure maple syrup

2 TBSP MCT oil

3 eggs   

1 tsp pure vanilla               

1 1/4 cups almond flour

1/2 cup coconut flour

1 tsp baking soda

1/2 tsp baking powder

Pinch of sea salt

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 cup chopped pecans

2 scoops of protein powder

1/3 cup smooth almond butter

Preparation

Preheat oven to 350 degrees

Grease pans or use liners (I used mini muffin pans)

In a large bowl mix first 5 ingredients

Add in all other ingredients except the almond butter. Mix well.

Fold in almond butter

Fill cups about 3/4 full and bake for 15 minutes.

Tips

*** note - you can use any nut butter and chopped nuts of your liking!

*** note – If baking regular sized muffins - bake for 20 minutes
